Passover Cooking Tips

1. An easy way to use your cookbook for Passover is to turn to the Kosher for Passover Index  found on page 303 in your book! It will give you many new ideas for delicious foods for your holiday entertaining.

2. If you are very ambitious, use page 300 for Passover Substitutions and take your everyday recipes and turn them into Passover delights!

Passover Brownies

INGREDIENTS
2 tbs oil
• 1 cup sugar
• 2 eggs
• 6 tbs cocoa
• ½ cup cake meal
• nuts

DIRECTIONS
1. Blend oil, sugar and eggs in mixer
2. Add cocoa, cake meal, and nuts (You can add 1 tbs oil for additional moisture)
3. Mix and pour into greased brownie pan and bake in 350' oven for 25 minutes
4. Double recipe for a 9x13 pan
5. Cool, then slice. Best baked and eaten the same day

Sarah's Passover Mandel Bread

INGREDIENTS
6 eggs (5 if extra large)
2 cups sugar
• ¾ cup oil
• juice of orange or lemon
• 1 cup nuts (almonds)
• 2 cups cake meal
• 1 tbsp potato starch
• 1 tsp starch

DIRECTIONS
1.Beat eggs. Add sugar, oil and juice. Add dry ingredients
2. Mix well and let stand to thicken
3. Oil hands. Form into rolls and place on greased and floured cookie sheet.  
4. Bake at 350' for 40 minutes.
5. Slice after baking.
6. Turn on side and sprinkle with cinnamon and sugar.
7. Return to oven and lightly toast

Note:  You can add a little cake flour if dough is not thick enough to handle.

Five Minute Sponge Cake

INGREDIENTS
9 eggs
• 1 ½ cups sugar
• 3 tbs potato starch
• ¾ cup cake meal
• juice of ½ lemon and rind (optional)
• grated chocolate (optional)

DIRECTIONS
1.Beat whole eggs for 5 minutes on high speed
2. Add sugar a little at a time.   Beat for 5 more minutes
3. Reduce speed to #5 on mixer
4. Add starch, cake meal and juice.   Beat for 5 more minutes
5. Add optional grated chocolate
6. Put in tube pan.   Bake 1 hour in a 350' oven
